Pizza Cupcakes

One of Derek's favorite foods is pizza. It was one of his first words so naturally, for his birthday, pizza was on the menu but I wanted a twist since we have quite a bit of pizza in our house. Here is the recipe that I used but it can easily adapted with various crusts and toppings. This was one of the first times I have used canned pizza crust, but when I make these again I will probably try a different crust....just because I can. I will admit up front that I am horrible at exact measurements. I am more of a "this looks good kinda girl" so as long as you can deal with that, keep reading.

Recipe:

1 tube of canned pizza crust
Prego marinara sauce
Pepperoni
Mozzarella cheese


Preheat oven to 425 degrees. Slice the pizza crust instead of unrolling the tube. Flatten the circles into the bottom of the muffin tin. (I didn't spray the bottom of my muffin tins, but I have awesome non-stick muffin tins so you may want to spray your tins). Top with marinara sauce, cheese, and pepperoni. Bake for 9-13 minutes.


Possible Twists:

  • Use a white sauce instead of red sauce
  • Add chicken for a chicken parm pizza
  • Add bacon, sausage, and hamburger for a meaty pizza
  • Add white sauce and shrimp for a seafood pizza
The possibilities are endless. The best part about this recipe is that this recipe make approximately 1 dozen pizza cupcakes. You can make the cupcakes ahead of time and you can reheat one or two at a time.

  1. The last time we were at Costco they were serving pizza bagel bites at one of the sample stations. I'm sure yours are WAAAAY better that Costco's! I will have to do this sometime, I know Susannah would love some pint-sized pizzas. :)
