4 eggs
1 3/4 cups granulated sugar
4 ounces unsweetened chocolate, melted and cooled
1/2 cooking oil
2 teaspoons baking powder
2 teaspoons red velvet cake flavor
2 cups all purpose flour
In a large mixing bowl beat eggs, granulated sugar, chocolate, oil, baking powder and red velvet cake flavor with a mixer until combined. Gradually beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Cover and chill dough 2 hours or overnight or until dough is easy to handle. Preheat oven to 375 degrees. Lightly greases a cookie sheet. Shape dough into 1-inch balls. Rolls balls into powdered sugar to coat generously. Place balls 1 inch apart on prepared cookie sheet. Bake for 8 to 10 minutes or until edges are set and tops are dry (do not overbake). Transfer to a wire rack and let cook. Cookies will deflate slightly upon cooking.
